The Philippines officially joined the global fine dining map yesterday as the Michelin Guide made its historic debut in the country, awarding stars to nine restaurants during a ceremony at the Manila Marriott Hotel in Newport World Resorts. Helm by Chef Josh Boutwood claimed the highest honor as the nation’s first and only two-Michelin-star restaurant, while eight establishments earned one star each in a selection that recognizes 108 establishments nationwide.michelin
“We are honored to present the first edition of the MICHELIN Guide in the Philippines,” said Gwendal Poullennec, International Director of the MICHELIN Guide. “This selection pays tribute to a new generation of Filipino chefs — and international chefs who have embraced the Philippines — drawing inspiration from local heritage, bold flavors and heartfelt hospitality.”michelin
The inaugural MICHELIN Guide Manila and Environs & Cebu 2026 marks a watershed moment for Philippine gastronomy, with Helm’s achievement particularly noteworthy. Led by Chef Josh Boutwood, the restaurant presents what Michelin describes as “a deeply personal expression of his half-British, half-Filipino heritage, infused with Spanish influences”. Boutwood told GMA News Online that the recognition “hasn’t sunk in yet,” adding he was “beyond surprised but also obviously extremely emotional”.michelin
Eight restaurants received one Michelin star for high-quality cooking: Asador Alfonso, Celera, Gallery by Chele, Hapag, Inatô, Kasa Palma, Linamnam, and Toyo Eatery. These establishments showcase the diversity of Philippine cuisine, from Asador Alfonso’s modern Spanish fare using ingredients sourced directly from Spain to Toyo Eatery’s celebration of Filipino flavors, where “Toyo,” meaning soy sauce in Tagalog, hints at the restaurant’s appreciation for layered, complex Filipino elements.scmp
Gallery by Chele earned both a Michelin star and the Green Star for sustainability, recognized for its “strong farm-to-table ethos and commitment to biodiversity, waste reduction and community sourcing”. The restaurant sources 90% of its ingredients locally, partnering with farmers, fisherfolk, and indigenous communities.michelin
Beyond the starred restaurants, 25 establishments received Bib Gourmand distinctions for offering exceptional food at moderate prices, including 19 in Manila and environs and six in Cebu. The Michelin Selected category honored 74 restaurants for their quality cuisine and noteworthy dining experiences.michelin
Three special awards highlighted individual excellence: Don Patrick Baldosano of Linamnam received the Young Chef Award at just 27 years old, Erin Recto of Hapag earned the Service Award for embodying Filipino hospitality, and Benjamin Leal of Uma Nota was recognized for exceptional cocktails.mega-asia
The ceremony celebrated what Poullennec described as Filipino cuisine being “bold, generous and deeply personal,” telling “a story of heritage and innovation, where sweet, salty, sour and umami harmonize to create flavors that are both comforting and exciting”. The recognition positions the Philippines alongside other prestigious Michelin destinations, potentially boosting culinary tourism and international recognition of Filipino gastronomy.newswatchplus
